A Recipe with a Story
This recipe is more than just a sweet treat — it’s a blend of tradition, travel, and a little viral inspiration. The dough starts with sourdough discard from Harry, my former boss’s wife’s starter that’s been all over the world — a true globetrotter in a jar. Using that discard gives these cinnamon rolls a subtle tang and rich depth you just can’t get from instant yeast alone.
To make things even better, I’ve woven in the TikTok-famous cinnamon roll hack — pouring warm cream over the rolls before baking — for that ultra-soft, gooey texture everyone’s obsessed with. The result? A recipe that brings together old-world sourdough character and modern comfort-food indulgence — the perfect bite of past and present.

- 30 g (2 Tbsp) unsalted butter, softened

🥣 Instructions
- Make the Dough
In a large bowl, whisk together sourdough discard, milk, melted butter, sugar, eggs, and salt.
Add bread flour and knead 8–10 minutes until smooth and elastic. - First Rise
Cover and rest in a warm spot until doubled, 2–3 hours. (Or refrigerate overnight for deeper flavor.) - Roll and Fill
Roll dough into a 12×18 inch rectangle. Mix butter, brown sugar, cinnamon, maple syrup and salt. Cover dough with filling leaving 1/2 inch on long edges. - Shape the Rolls
Roll tightly from the long edge. Cut into 12 pieces and arrange in a greased 9×13 inch pan. - Second Rise
Cover and proof 45–60 minutes, until puffy. - TikTok Cream Bake
Preheat oven to 350°F (175°C). Pour heavy cream evenly over the rolls, top rolls evenly with butter, and bake 25–30 minutes until golden and bubbling. - Frosting
Beat cream cheese, butter, powdered sugar, vanilla, and salt until smooth. Spread over warm rolls before serving.
👨🍳 Chef’s Notes
- Sourdough discard adds a subtle tang and moisture; use unfed discard 12–24 hours post-feeding.
- Optional yeast gives a faster, more reliable rise if your starter is sluggish.
- Overnight option: Shape, refrigerate overnight, then let rolls come to room temp before baking.
- Serving tip: Sprinkle flaky salt or maple sprinkles for a gourmet finish.
