Sourdough Discard Cinnamon Rolls (TikTok Cream Method)

🧂 Ingredients

Dough

  • 240 g (1 cup) sourdough discard
  • 240 ml (1 cup) warm milk (about 100°F)
  • 100 g (½ cup) unsalted butter, melted
  • 75 g (⅓ cup) granulated sugar
  • 1 large egg + 1 egg yolk
  • 6 g (1 tsp) salt
  • 540 g (4 ¼ cups) bread flour
  • 7 g (2 tsp) instant yeast (optional, for faster rise)

Filling

  • 100 g (½ cup) softened butter
  • 200 g (1 cup, packed) light brown sugar
  • 15 g (1 Tbsp) ground cinnamon
  • 2 Tbsp Maple Syrup
  • Pinch of salt

TikTok Cream Method

  • 240 ml (1 cup) heavy cream
  • 30 g (2 Tbsp) melted butter

Frosting

  • 115 g (½ cup) cream cheese, softened
  • 30 g (2 Tbsp) unsalted butter, softened
  • 120 g (1 cup) powdered sugar, sifted
  • 5 ml (1 tsp) vanilla extract
  • Pinch of salt

🥣 Instructions

  1. Make the Dough
    In a large bowl, whisk together sourdough discard, milk, melted butter, sugar, eggs, and salt.
    Add bread flour and knead 8–10 minutes until smooth and elastic.
  2. First Rise
    Cover and rest in a warm spot until doubled, 2–3 hours. (Or refrigerate overnight for deeper flavor.)
  3. Roll and Fill
    Roll dough into a 12×18 inch rectangle. Mix butter, brown sugar, cinnamon, maple syrup and salt. Cover dough with filling leaving 1/2 inch on long edges.
  4. Shape the Rolls
    Roll tightly from the long edge. Cut into 12 pieces and arrange in a greased 9×13 inch pan.
  5. Second Rise
    Cover and proof 45–60 minutes, until puffy.
  6. TikTok Cream Bake
    Preheat oven to 350°F (175°C). Pour heavy cream evenly over the rolls, top rolls evenly with butter, and bake 25–30 minutes until golden and bubbling.
  7. Frosting
    Beat cream cheese, butter, powdered sugar, vanilla, and salt until smooth. Spread over warm rolls before serving.
